Puffed vegetable salads are a very successful culinary invention. Take at least all the famous herring “under the fur coat” – everything is good. And it looks beautiful on any table, and the taste is wonderful, and consists mainly of vegetables alone. True, the presence of herring in the salad slightly violates its vegetable “status.”
We want to offer you delicious salads, consisting of both vegetables and meat.
For a start, a very delicate and fresh puff vegetable salad, which, no doubt, will decorate your menu and will please your family members with its taste qualities.
Layered vegetable salad
- 4 potatoes
- 2 large beets
- 3-4 carrots (depends on the size)
- 2 large apples
- 1 large juicy bulb
- 200 grams of mayonnaise
- sugar, salt to taste
Potatoes and carrots to boil. Beet roast, and chop the onions into thin half rings and marinate.
For marinade mix the vinegar and water (about 1: 1), add salt and sugar – should get a pleasant taste of marinade.
To prepare a salad you need a fairly large flat dish.
Grated vegetables are laid out in layers. Each layer is slightly lubricated with mayonnaise.

Repeat all layers in the same sequence. All puffed salads should soak for several hours. It can be done in the evening and left in the refrigerator for the whole night. Slice it like a cake.
The salad is very light and pleasant. Mayonnaise is better to cook homemade or take a quality ready-made sauce. In principle, vegetables can not be salted, because mayonnaise contains salt, but if you do not have enough, you can slightly add each layer of vegetables.
Layered salad with cucumber and chicken
- 150-200 grams of chicken breast (fried, boiled, smoked)
- 2 fresh cucumbers
- 3 hard boiled eggs
- 100 grams of hard cheese
- 100 grams of mayonnaise
- 5 walnuts
- prunes (6-8 pieces)
To cook this very delicate and delicious layered salad, chop small chicken breast and peeled fresh cucumbers. Eggs clean and cut into cubes (one yolk shredded and set aside – it will be needed for decoration). Cheese grated on the grater.
Now let’s “collect” the salad – all the ingredients are stacked in layers:

- eggs (cover with lettuce mayonnaise)
- cheese (with mayonnaise)
Then sprinkle the salad with crushed yolk, decorate with pieces of nuts and prunes.
This is a very tasty salad. If you are preparing for a large company, you can make a double – that is, repeat all the layers again in the same sequence.
Layered salad with sour cream sauce
- 2 large beets
- 3 large carrots
- large juicy bulb
- 5-6 salted cucumbers
- 1-2 wet or pickled apples
- a few salted or pickled mushrooms (best chanterelles – they are bright, and the salad will look festive)
- 250 grams of sour cream
- a tablespoon of mustard with seeds
- a teaspoon of hot chilli sauce
Beet the cake, boil the carrots. Cooled vegetables to grate. Cut cucumbers into small strips. Cut the apples into strips, the onions into small cubes. All the ingredients of the salad are laid in layers. Each layer is smeared with sour cream sauce. Like all puffed salads, our salad cake should soak well. It can be prepared well in advance, and by the time visitors arrive, they will reach the right condition.

The top layer is sprinkled with sliced and soaked apples and mushrooms. Boka is coated with sauce – the layered salad should look like a cake.
Usually, all the puffed salads are put in a refrigerator for a couple of hours, so that they are impregnated. Our salad cake is no exception. It can be prepared well in advance, and by the time visitors arrive, they will reach the right condition.
Sour cream sauce: mix sour cream, mustard and chili sauce, all lightly beat.
Layered salad “Monomakh’s Hat”
- 200 grams of juicy ham
- 3 boiled potatoes
- 3 boiled eggs
- 2 carrots (uncooked)
- 200 grams of mayonnaise
- handful of peeled walnuts
- 150 grams of hard cheese
- 2 cloves of garlic
- 1 grenade
- salt to taste
The ham is cut into thin strips. Cheese, potatoes, carrots and eggs grate. Nuts chop. Add carrots, add chopped garlic and season with mayonnaise – in other words, prepare a kind of salad that will serve as one of the layers.
We stack all the ingredients in layers in such a sequence (each layer is slightly greased with mayonnaise):

Cover the top layer well with mayonnaise and generously decorate with pomegranate seeds. Like all puffed salads, it should be well soaked, for which the salad should be placed in the refrigerator for several hours.
Note. Ingredients should be laid out in the shape of a dome, so that the salad matches its name.
Puffed salads are also good in that they make it possible to create different variations. You can change the ingredients, combine vegetables with other ingredients, improve sauces. In addition, these salads always look beautiful, have high taste qualities and can replace a full lunch or dinner.
